Having a good amount of challenge in a piece force into you to have some break through sometime even if it can be hard on the moral.Of course knowing when your chewing to much is also important not to burn out.A nice thing also to improve is taking a piece that you feel is somewhat higher that your current skillset and trying to own it. It would be a trap to try to study thing you ''already plateau at'' that of course if your aware that you are in a plateau.Like you said you can try to make it your own if stylisation is something you wanna push.You can even try to completely reinvent the light scenerio the color of the background or even change is ethnicity or even change the sex of the character to be something else and if you wanna get your imagination out of is bag you could even transform him into a sex robot there no limit to how far you can try to make it your own.Those are some example of how i think it possible to create something new out of a reference.Whatever fundamental you want to own you can try to do it by using a reference as a ''kind of safety net'' since some of the anwers are already answered by the reference.
